Ingredients

1lbcarrots,peeled

2tspdijon mustard

1tbspfreshly squeezed lemon juice,from one lemon

1½tbspvegetable oil

1½tbspextra virgin olive oil

2tsphoney,to taste

¼tspsalt

¼tspfreshly ground black pepper,to taste

2tbspfresh parsley,chopped

2finely sliced scallions,(or 1 tbsp) chopped shallots

Preparation

Grate the carrots in a food processor. Set aside.

In a salad bowl, combine the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, fresh parsley and scallions (or shallots) and toss well.

Taste and adjust seasoning if necessary. Cover and refrigerate until ready to serve.
