Ingredients
2lemons
¾cupbutter
¼cupshortening
3cupspowdered sugar
½tsplemon extract,optional
Preparation
Zest both lemons, then set the zests aside.
Juice one of the lemons to make 2 tablespoons of juice. Reserve the remaining lemons for another use.
Cream the butter and shortening in a bowl with a mixer on medium until light and fluffy. Add the lemon zest, juice, and extract. Mix well.
Add the powdered sugar ½ cup at a time, then beat until light and fluffy.
Serve over cupcakes, cakes, and other desserts, and enjoy!
