Ingredients
½cupextra-virgin olive oil
½cuplemon juice
¼cupfresh mint leaves,(spearmint), half of a ⅔ or ¾-oz package
3tbsphoney,or maple syrup
1tbspdijon mustard
2garlic cloves,roughly chopped
¼tspfine sea salt
freshly ground black pepper,10 twists
Preparation
In a food processor, combine the olive oil, lemon juice, mint, honey, mustard, garlic, salt, and pepper, then blend until smooth. Taste, and add more salt and/or pepper, if necessary.
Serve over salads, and enjoy!
