Ingredients

2pintsgrape tomatoes,halved or 3 cups diced tomatoes

¼cupred onion,thinly sliced

1tbspfresh herbs,such as basil and fresh oregano

3tbspolive oil

1tbspred wine vinegar

salt & pepper,to taste

½cupbocconcini,sliced or diced, optional

Preparation

Place tomatoes, red onion, and bocconcini in a shallow bowl.

Drizzle with olive oil and red wine vinegar. Toss to combine.

Season with salt, pepper and fresh herbs to taste.
