Ingredients
4bacon slices,uncooked, diced
1small white onion,finely diced
1jalapeño,stemmed, seeded and diced
4garlic cloves,minced
12ozMexican beer,dark, like Negra Modelo
15ozpinto beans,rinsed and drained
1tbspbrown sugar
1tspdried oregano
1tspchili powder
1tspsalt
½tspcumin
1tbsplime juice,fresh
¼cupfresh cilantro,chopped
Preparation
Cook the bacon in a large sauté pan over medium-high heat until crispy, stirring occasionally.
Remove the bacon with a slotted spoon, then transfer them to a separate plate. Set aside.
Reserve 1 tablespoon of the bacon grease in the sauté pan, discarding the extra.
Add the onion and jalapeno, then sauté for 5 minutes or until the onion is soft and translucent.
Add the garlic, then sauté for an additional 1 to 2 minutes until fragrant.
Add the beer, beans, brown sugar, oregano, chili powder, salt and cumin, then stir to combine.
Continue cooking until the beans reach a simmer.
Reduce the heat to medium-low, then continue simmering uncovered for about 15 minutes.
Stir in the bacon and lime juice.
Serve the beans topped with fresh cilantro, and enjoy!
