Ingredients

1¼lbschicken breasts,boneless skinless, cut into 1¼ -inch pieces

2tbspall-purpose flour

1½tspItalian seasoning

salt and freshly ground black pepper

1tbspolive oil

3tbspunsalted butter,divided

1½tbspfresh garlic,(4 cloves), minced

2tbspfresh parsley,finely chopped

Preparation

Preheat a 12-inch non-stick skillet over medium-high heat.

Dab the chicken on all sides dry with paper towels. Sprinkle the flour, Italian seasoning, and desired amount of salt and pepper over the chicken. Toss well to evenly coat.

Add 1 tablespoon of olive oil and 1 tablespoon of butter to the skillet. Tilt the pan to evenly coat.

Add the chicken in an even layer, working to leave some space between pieces. Let cook for about 3 minutes, until nicely golden brown on the bottom, then flip to the opposite side and cook for 2 minutes longer, or until nearly cooked through.

Add the remaining 2 tablespoons of butter in small pieces, along with the garlic and parsley. Cook for 1 minute longer

Serve right away, and enjoy!
