Ingredients
1tbspolive oil
4garlic cloves,minced
1lbchicken tenderloins,diced
½onion,diced
½red bell pepper,diced
15ozblack beans,(½ can), rinsed and drained
¼cupfresh cilantro,chopped, or to taste
½cupchunky salsa
4large flour tortillas,or as needed
¼cupMexican cheese blend,shredded, or to taste
Preparation
Heat the olive oil in a skillet over medium-high heat, then sauté the garlic for about 1 minute until fragrant.
Add the chicken, then cook and stir for about 5 to 7 minutes until the chicken is no longer pink in the center.
Mix the onion, red bell pepper, black beans, and cilantro into the chicken, then sauté for about 5 minutes until onion is tender. Stir the salsa into the chicken mixture for about 1 to 2 minutes until heated through.
Spoon the chicken mixture into tortillas and top with Mexican cheese blend.
