Ingredients

½cupextra-virgin olive oil

2tbspapple cider vinegar,to taste

2tbspdijon mustard

1tbspmaple syrup,or honey, to taste

2tspfresh ginger,finely grated

½tspfine sea salt

freshly ground black pepper,(about 20 twists)

Preparation

In a jar or small bowl, whisk together all of the ingredients until fully blended.

Taste, and adjust if necessary. For more tartness, add another 1 teaspoon of apple cider vinegar, or for more sweetness/balance, add another 1 teaspoon or 2 of maple syrup.

Serve over salads, and enjoy!
