Ingredients
6cupsarugula,fresh, loosely packed
2cupsgrapes,halved seedless, red or green or a mix
1avocado,peeled, pitted and diced
½cupgoat cheese,crumbled
½cupwalnuts,or pecans, chopped toasted
small red onion,half, peeled and thinly sliced
⅓cupextra virgin olive oil
3tbspwhite balsamic vinegar,or traditional balsamic vinegar
2tbsphoney,or agave nectar, to taste
¼tspsea salt
⅛tspblack pepper,freshly-cracked
Preparation
Add the arugula, grapes, avocado, goat cheese, walnuts and red onion to a bowl.
Whisk the olive oil, vinegar, honey, salt, and black pepper together in a separate bowl for 30 seconds until combined.
Drizzle the vinaigrette over the salad, then toss to combine.
