Ingredients
6 oz feta cheese
1 cup butter , or margarine, melted or butter flavored cooking spray
1 small shallot, minced
12 sheet phyllo, defrosted
2 box frozen spinach, thawed and squeezed dry
2 eggs, beaten
2 tbsp butter , or margarine
3 grind black pepper
Preparation
In a medium saucepan under medium heat, sauté shallot in 2 Tbs butter and then cool. Add all ingredients except 1 cup butter/spray and mix well.
Lay out phyllo on cutting board and brush butter (or spray) between 6 layers of phyllo. Lay prepared phyllo into rectangular baking dish.
Add spinach mixture, pat down and continue with phyllo, brushing butter between remaining 6 layers of phyllo. Finish with butter on top phyllo.
Bake at 350 degrees for about 25-35 minutes (depending on your oven). Let side about 10 minutes before serving.
