Ingredients
15ozchickpeas,(1 can), rinsed and drained
2cupsPersian cucumber,diced
1green bell pepper,sliced
1⅓cupsgrape tomatoes,halved
20kalamata olives,or gaeta olives
¼cupred onion,sliced lengthwise
4ozfresh feta,sliced thick
2fresh lemons,juiced
2tbspextra virgin olive oil
2tspfresh oregano leaves,minced
¼tspkosher salt
freshly ground black pepper,to taste
Preparation
In each of four 4-cup containers or bowls, arrange ⅓ cup of chickpeas, ½ cup of cucumber, ¼ of green pepper, ⅓ cup of tomato, olives, and red onion. Top with the Feta cheese.
In a small bowl, whisk the lemon juice, olive oil, oregano, salt, and pepper.
Drizzle about 1½ tablespoons of dressing with each salad.
