Ingredients
1cupquinoa,uncooked
2cupswater,or broth
1pintcherry tomatoes,diced
½cupred pepper,diced
½cupgreen pepper,diced
1cupcucumber,diced
½cupblack olives,sliced
¼cupred onion,diced
3ozfeta cheese
⅓cupGreek dressing
1tbspparsley,chopped
Preparation
Prepare quinoa according to package directions. Cool.
In a large bowl, combine tomatoes, red and green peppers, cucumber, olives, red onion, feta cheese, and dressing. Toss to coat evenly.
Add cooled quinoa and combine.
Garnish with fresh parsley on top.
