Ingredients
4ozIdahoan® Roasted Garlic Flavored Mashed Potatoes,(1 package)
1lbbutter,softened
1french bread loaf
1cupcherry tomatoes,cut in half
1cupcucumber,peeled, sliced into ¼-inch thickness, cut into quarters
1medium red onion,chopped into thin slices, *
1small green pepper,coarse chopped
¾cupkalamata olives,pitted, sliced
6tbspolive oil
1½tbsplemon juice,fresh
1tbspred wine vinegar
2garlic cloves,minced
¾cupfeta cheese,crumbled for topping
2cupsplain Greek yogurt
1cupcucumber,diced small
2tbsplemon juice,fresh
2garlic cloves,minced
2tbspfresh dill,finely chopped
salt and pepper,to taste
Preparation
Mix the dry package of Idahoan Roasted Garlic Potatoes with the butter until blended.
Slice the French bread length wise and generously spread with the roasted garlic mixture.
Toast under the broiler until butter spread is melted and toasted on top.
Drain the onion from the ice water and pat dry with paper towels.
In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic, and dill. Stir until well combined. Taste and season with salt and pepper.
In a large bowl, combine the tomatoes, cucumber, onion, green pepper, olives, olive oil, lemon juice, vinegar, and garlic.
Top the French bread with the Greek salad, then sprinkle cheese over top.
Serve with Tzatziki sauce, and enjoy!
