Ingredients
16ozpenne pasta
1cupkalamata olives,pitted, sliced
2cucumbers,diced
1cupcherry tomatoes,sliced
1½cupfeta cheese,crumbled
1cupGreek yogurt,low-fat, plain
¼cupolive oil
1tbspfresh dill,chopped
1tbsplemon juice
1tspsalt
½tspfreshly ground pepper
1garlic clove,minced
Preparation
Prepare the pasta according to package directions. Drain and rinse in cold water.
Place in a large sized bowl. Add the kalamata olives, cucumbers, tomatoes, and feta cheese.
In a small bowl, whisk the Greek yogurt, olive oil, chopped dill, lemon juice, salt, pepper, and garlic. Add to the large bowl and toss all ingredients together.
Chill for 1 hour before serving.
