Ingredients
12ozchicken breast,(from 1 lb raw), grilled, sliced
1cupavocado,diced
1cupmango,(from 1½ mangoes), diced
2tbspred onion,diced
6cupsbaby red butter lettuce
2tbspolive oil
2tbspwhite balsamic vinegar
salt and fresh cracked pepper,to taste
Preparation
Whisk the olive oil, balsamic vinegar, salt, and pepper, then set aside.
Toss the avocado, mango, chicken and red onion together.
Fill a large salad platter with baby greens or divide on 4 small dishes. Top with chicken-avocado mixture, then drizzle half the dressing on top.
Serve with remaining dressing, and enjoy!
