Ingredients
24ozsalmon fillets,(4 fillets), skinless
1tbspolive oil,plus more for brushing grill
salt and freshly ground black pepper
1tspground cumin
1small avocado,diced
¼cupfresh parsley,finely minced
2tbspfresh cilantro,finely minced
1tspdried oregano
1½tspgarlic,minced
1½tbspred wine vinegar
1tbspfresh lemon juice
2tbspminced red onion
3tbspextra virgin olive oil
2tbspwater
⅛tspred pepper flakes,optional
Preparation
Preheat a gas grill to 425 degrees F.
Brush both sides of salmon with olive oil., then season with salt, pepper, and cumin.
Brush grill grates with oil, place salmon on grill, and grill for about 3 minutes per side, or to the desired doneness. Serve salmon immediately topped with avocado chimichurri.
To prepare chimichurri, in a small mixing bowl, toss together all chimichurri ingredients while seasoning with salt and pepper to taste.
