Ingredients
½cupnopales,(mexican cactus), diced
1largeripe avocado,halved and pitted
½lime,juiced
1tbspolive oil
salt to taste
1plum tomato,seeded and chopped
1fresh jalapeno pepper,seeded, deveined, and minced, or to taste
4sprigsfresh cilantro,chopped
Preparation
Heat a small nonstick skillet over medium heat. Add nopales and cook for about 10 minutes, stirring occasionally, until soft. Let cool.
Mash avocado in a bowl with lime juice, olive oil, and salt. Stir in tomato, jalapeno, cilantro, and cooked nopales.
