Ingredients
4mediumsweet potatoes
4tbspGarlic butter
1tbsplemon juicefreshly squeezed
1tspfresh thyme leavesfinely chopped
1tsprosemaryfinely chopped
Kosher salt and freshly ground black pepper
Extra herbsto garnish
Preparation
Preheat the oven to 425 degrees F. Line a baking tray with aluminum foil. Set aside.
Wash and scrub the sweet potatoes; pat them dry with a paper towel.
Carefully slice each sweet potato ⅛-inch slits along the tops, stopping ½-inch from the bottom. Be careful not to apply too much pressure or you may cut straight through.
Prepare the Garlic Butter using by melting the butter. Mix the lemon juice, thyme, rosemary, salt, and pepper through the butter. Set aside.
