Ingredients
¾butternut squash,diced
1lbsage pork sausage,crumbled
3potatoes,cut into small cubes
3stalks celery,sliced
3carrots,sliced
15ozchickpeas,(1 can) rinsed and drained
15oztomatoes,(1 can) crushed
1large onion,diced
8oztomato sauce,(1 can)
1green bell pepper,thickly sliced
4clovesgarlic,minced
1½tspcurry powder
1½tspground cumin
1½tspchinese five-spice powder
salt and ground black pepper,to taste
Preparation
Stir butternut squash, sausage, potatoes, and the rest of the ingredients together in a slow cooker.
Cover and cook on HIGH SETTING until butternut squash is tender and sausage is cooked through, about 2 hours and 30 minutes.
Stir ingredients halfway through the cooking process if possible.
