Ingredients

1tbspolive oil

3clovesgarlic,minced

1cupyellow onion,(½ large) chopped

1tbspItalian seasoning

¾tspsalt

¾tspdried thyme

¼tspfresh ground black pepper

8cupsvegetable broth,beef or chicken

4cupsvegetables,frozen, canned, or fresh

1medium potato,heaping cup, peeled and chopped

1bayleaf

6oztomato paste,(1 can)

14oztomatoes,(1 can) do not drain, diced

1cupdry alphabet pasta

Preparation

Heat the olive oil over medium heat in a 20 cups (or larger) pot or dutch oven. Add the garlic, onion, Italian seasoning, salt, thyme, and pepper. Stir and cook for 5 minutes as the onion softens.

Add broth, vegetables, potato, bay leaf, tomato paste, and diced tomatoes. Bring to a boil, then add uncooked pasta. Cover and simmer for 30 minutes. Remove bay leaf.

Serve soup warm and top with fresh parmesan cheese, if desired. Enjoy.
