Ingredients

3tbspbutter

3cupspotatoes,diced

1cupred bell peppers,chopped

½cuponions,chopped

1lbcorned beef,cooked and cubed

1tbsp*Italian seasoning,(see Recipe Notes for recipe)

4eggs

¼tspsalt

¼tsppepper

1pinchred pepper flakes,optional

Preparation

Preheat oven to 400 degrees F.

In a medium sized skillet, melt butter then add diced potatoes. Cook 5 to 7 minutes, until the potatoes are tender and slightly crispy.

Add bell peppers and onions, and cook 4 to 6 minutes until tender. Add the Corned beef and cook until warmed and slightly brown.

Crack the eggs on top of the hash. Place the skillet in the oven and bake for 8 to 10 minutes until eggs are set. Season with salt, pepper, and red pepper flakes.

Serve and enjoy.
