Ingredients

1cupvinegar

½cupwater

1ozvegetable oil

¼tspwhite sugar

¼tspsalt

¼tspground black pepper

2bulbskohlrabi,peeled, sliced into ¼-inch half moons

Preparation

Whisk the vinegar, water, vegetable oil, sugar, salt, and pepper together in a bowl until the solids are completely dissolved into the liquid.

Add kohlrabi to the liquid, and marinate overnight or up to 12 hours.

Pour into a saucepan and cook over medium heat for about 25 minutes until the kohlrabi is tender.

Set aside to cool completely before eating.
