Ingredients
¾cupsextra-virgin olive oil,or avocado oil
¼cupred wine vinegar
2tbsphoney
2chipotles in adobo,plus an extra teaspoon of the adobo sauce
2garlic cloves
2tbsplime juice,freshly-squeezed
1tspground cumin
½tspdried oregano
½tspsalt
black pepper,freshly cracked
Preparation
Add the olive oil, vinegar, honey, chipotles in adobo, garlic, lime juice, cumin, oregano, salt, and black pepper to a blender or food processor. Puree until smooth.
Taste, then add extra honey for a sweeter dressing.
Serve over salads, and enjoy!
