Ingredients
2lbnew potato,small red and yellow potatoes
2tbspolive oil
4tbsplemon juice
4garlic cloves,minced
2tbspfresh thyme
salt,to taste
pepper,to taste
2tbsphoney
2tspginger,chopped
2salmon fillets
1lbasparagus,(1 bunch)
1lemon,sliced
4fresh thyme sprigs,for garnish
Preparation
Preheat the oven to 400 degrees F. Cover a sheet pan with aluminum foil and spray with nonstick cooking spray.
Spread out the potatoes on the pan, then drizzle with 1 tablespoon of olive oil and 1 tablespoon of lemon juice. Season with salt and pepper, then sprinkle ½ tablespoon of thyme, and 1 clove minced garlic.
Bake for 15 minutes, flip, then bake for another 10 minutes.
Combine 2 tablespoons of lemon juice, honey, ginger, 1 clove of minced garlic, and 1 tablespoon of thyme. Set aside.
Take the potatoes out of the oven, then push them to the top or side of the pan.
Place the salmon fillets on the pan. Season both sides with salt and pepper, then brush on the glaze onto both sides, then top with lemon slices and sprigs of thyme.
Place the asparagus on the pan and top with 1 tablespoon of olive oil, 1 tablespoon of lemon juice, salt and pepper, 1 clove minced garlic, and ½ tablespoon of thyme.
Bake for 8 to 10 minutes.
Serve warm, and enjoy!
