3tbspfresh lime juice,(+ 1 tsp lime zest)

2tbspbutter

1¼lbsraw shrimp,(large or extra-large), peeled and deveined, dabbed dry with paper towels

1½tspgarlic,minced

salt and pepper

Preparation

In a small mixing bowl whisk together honey and lime juice.

Melt butter in a 12-inch non-stick skillet over medium heat. Add garlic and saute for 30 seconds.

Add shrimp, season with salt and pepper, pour in honey and lime mixture. Spread shrimp out into an even layer.

Cook for about 1½ minutes until pink and opaque on bottom then flip and continue to cook for 1½ minutes longer until shrimp has cooked through.

Sprinkle with lime zest. Serve warm over rice if desired, spooning sauce over shrimp.
