Ingredients
16 oz solid-pack pumpkin
1 cup evaporated milk, low-fat
3/4 cup honey
3 eggs, slightly beaten
2 tbsp flour
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp rum extract
1 pre-made pastry , for a single 9-inch pie crust
Preparation
Combine all ingredients except pastry in a large bowl. Beat until well blended.
Line a 9-inch pie plate with the pastry and pour in the filling.
Bake at 400 degrees for 45 minutes or until knife inserted near center comes out clean. Serve.
