Ingredients

1lbalmonds,(3 cups), raw

3tbsphoney

1½tbspcoconut oil,melted

⅛tspsea salt,plus more to taste

Preparation

Preheat the oven to 350 degrees F.

In a small mixing bowl, whisk together the melted coconut oil, honey, and salt until well combined.

Place the almonds in a mixing bowl, then pour the honey mixture over the almonds and toss to evenly coat.

Spread the almonds into an even layer on a baking sheet lined with a silicone liner, scraping any excess honey from bowl using a spatula and spread over almonds.

Bake in the oven for 14 to 15 minutes until nicely roasted, tossing once halfway through. Cool completely for about 20 minutes.

Pour the almonds into a food processor. Pulse for 8 to 20 minutes, depending on the food processor until ground into butter, stopping and scraping down sides and bottom of mixer every few minutes.

Near end of mixing, if more sweetness is desired, add up to 1 tablespoon of honey and another pinch of salt, as desired.

Serve with desired biscuits and enjoy!
