Ingredients

13¾ozartichoke hearts packed in water,drained

10ozfrozen spinach,thawed and squeezed

¼cupshallots,chopped

1clovegarlic

½cupfat-free Greek yogurt

½cuplight mayonnaise

⅔cupgood quality Parmesan,grated

4ozpart-skim mozzarella cheese,shredded

salt and fresh pepper,to taste

olive oil spray

Preparation

Preheat oven to 375 degrees.

In a small food processor, coarsely chop the artichoke hearts with garlic and shallots.

Combine all the ingredients in a medium bowl.

Place in an oven-proof dish and bake at 375 degrees F for 20 to 25 minutes, until hot and cheese is melted. Serve right away.
