Ingredients

4lbschicke,(1 whole)

1½piecesonion,divided

3carrots,include tops

2stalkscelery,include tops

2sprigsthyme,each fresh rosemary, parsley, sage or any combination

3sprigsfresh parsley

2bay leaves

1tbsppeppercorns

2tspsalt

enough water to cover,this will depend on the size pot

Preparation

Cut 1 onion, carrots, and celery into quarters (include the tops of the carrots and celery).

Place the ½ onion into the cavity of the chicken.

Place chicken in pot and add vegetables, fresh herbs, bay leaves, peppercorns and salt. Cover with water.

Cover pot and bring to a boil over high heat. Once boiling, turn the heat down and simmer partially covered for about 1½ to 2 hours.

Remove chicken, allow to cool then remove meat from bones.

Strain and reserve broth.
