Ingredients

1onion,large, diced

1tbspolive oil

2chicken breasts,large

1cupcarrots,sliced

1cupcelery,sliced

1tbspparsley,fresh

1bay leaf

6cupschicken broth

4ozegg noodles

salt & pepper,to taste

Preparation

Turn the Instant Pot on to Saute mode. Cook onion in olive oil until softened.

Add remaining ingredients except for the noodles. Select Soup and High-Pressure modes and change the time to 10 minutes.

Quick-release the pressure on the Instant Pot. Once cooked, remove and discard bay leaf. Remove chicken breasts and shred with a fork.

Turn Instant Pot onto Saute once again. Once broth begins to boil, add egg noodles, and allow to simmer 6 to 8 minutes or until tender.

Stir in chicken and season with salt and pepper to taste.
