Ingredients

1tbspolive oil

1small onion,diced

1½lbschicken,cut into 1-inch cubes

1tbspItalian seasoning

salt and pepper

4cupschicken broth

1½cupsrice,rinsed, I used Jasmine

1cupmushrooms,sliced

½cupheavy whipping cream

¼cupparmesan cheese,shredded

salt and pepper,to taste

parsley,chopped

parmesan cheese,freshly shredded

Preparation

Set the instant pot to sauté. Add in olive oil and onion. Cook until it is almost tender and then add the chicken.

Add the Italian seasoning and salt and pepper. Continue to sauté until no longer pink.

Add in the chicken broth, rice, and mushrooms. Cover the instant pot and make sure it is in the sealed position.

Cook on manual High for 8 minutes. Carefully quick release the remaining pressure.

Stir in the heavy cream and Parmesan Cheese. Serve with freshly shredded cheese and chopped parsley for garnish.
