Ingredients

1tbspwhipped butter

1½cupswhite and pale green leeks,(3 large),halved lengthwise, sliced thin

½cupIrish steel cut oats

4cupsfat-free reduced sodium chicken broth,vegetarians use vegetable broth

1½cupsfat-free milk

Pepper,fresh cracked to taste

2tbspfresh chives,for garnish

Preparation

Melt the butter in a medium saucepan over low heat; add the leeks.

Cook, stirring occasionally for about 15 minutes until the leeks are soft.

Add the broth and milk; raise heat to high and bring to a boil.

Add the oatmeal and fresh cracked black pepper to taste.

Return to a boil, stirring occasionally; reduce heat to low.

Cover and simmer gently for 45 to 50 minutes (less if using Quaker oats) until oats are tender.
