2avocados,diced
1English cucumber,sliced
3roma tomatoes,diced
¼cupred onion,sliced
½cupmozzarella cheese balls
2tbspolive oil
2tbsplemon juice
1tbspItalian seasoning
salt and pepper
Preparation
In a large bowl, combine the avocado, cucumber, tomatoes, red onion, and mozzarella cheese balls. Gently toss.
In a small bowl, whisk the olive oil, lemon juice, and Italian seasoning. Add to the vegetables and toss. Add salt and pepper to taste.
