Ingredients

4cupsromaine lettuce,chopped

½cupEnglish cucumber,peeled, cubed

½cupcherry tomato,halved

red onion,sliced

2tbspolive oil

1tbspred wine vinegar

Kosher salt and black pepper

½red pepper,roasted, chopped

1ozgenoa salami,sliced

6tbspmozzarella,shredded part-skim

Preparation

Toss the lettuce, cucumbers, tomatoes, red onion with oil and vinegar, season with salt and pepper to taste.

Top with roasted red pepper, salami and mozzarella.
