Ingredients

4cupsfresh kale,chopped

4cupsRomaine lettuce,chopped

2cupscroutons,instructions below

¾cupParmesan cheese,grated

1cupcherry or grape tomatoes,halved, optional

½cupplain Greek yogurt

½cupParmesan cheese

4tbspfresh lime juice

1tbspextra-virgin olive oil

1-2tspanchovy paste,to taste

2tspWorcestershire sauce

1clovegarlic,pressed or finely minced

1tspDijon mustard

¼tspsea salt

pinch of black pepper

4tbspmilk

Preparation

Add the kale, Romaine, croutons, Parmesan, dressing, and tomatoes to a large bowl.  Toss until combined.

Serve immediately.

Add all ingredients except milk to a small mixing bowl, and whisk together until combined and smooth.

Whisk in a tablespoon of milk at a time until the dressing reaches your desired consistency.

Use immediately, or refrigerate in a sealed container for up to 3 days.
