Ingredients
1tspolive oil
½white onion,coarsely chopped
2garlic cloves,chopped
1jalapeno,seeded and chopped
1lbground beef,90% lean
½tspblack pepper
½tspground cinnamon
½tspground ginger
½tspturmeric
1tspkosher salt
1tspground cumin
1tspground coriander
1bunchcollard greens,8 leaves, stems removed sliced into 1-inch srips
15grape tomatoes,quartered
1tsplemon juice
Preparation
Warm the olive oil in a large skillet over medium heat.
Add the onion and saute for about 4 minutes, or until soft.
Add the garlic and jalapeño and saute for about 1 minute, until fragrant.
Add the ground beef and seasonings and cook for about 6 to 8 minutes, until browned.
Add the collard greens and tomatoes and saute for about 4 minutes, until wilted.
Stir everything gently as it cooks, careful not to mush the tomatoes.
Add the lemon juice, season with salt and pepper to taste and serve.
