Ingredients
1tbspbutter
½cuponion,chopped
½cupcelery,sliced
1cupcarrots,peeled and sliced
1tspgarlic,minced
salt and pepper,to taste
½tspdried thyme
6cupschicken broth,or turkey broth
3cupsturkey,cooked, chopped or shredded
6ozdry egg noodles
2tbspfresh parsley,chopped
Preparation
Melt the butter in a large pot over medium high heat.
Add the onion, celery and carrots, then season them with salt and pepper to taste.
Cook for 4 to 6 minutes or until the vegetables are just softened.
Add the garlic and cook for 30 seconds more.
Add the thyme, broth and turkey to the pot, then bring to a simmer.
Cook for 20 minutes or until the vegetables are tender.
Add the noodles to the pot, then cook for the time that’s listed on the package.
Stir in the parsley and add more salt and pepper to taste.
Serve warm, and enjoy!
