Ingredients

4salmon fillets,(6 to 7 oz) skinless

¼cupfresh lemon juice

¼cupolive oil,plus more for brushing the grill

2tbspfresh parsley,finely minced, plus more for garnish

4tspfresh rosemary,finely minced

2tspfresh thyme,finely minced

2tspgarlic,(2 cloves), minced

2tspfresh lemon zest

1tspdijon mustard

1tsphoney

salt and freshly ground black pepper

Preparation

Place the salmon in an 11×7-inch dish.

In a small mixing bowl, whisk together the lemon juice, olive oil, parsley, rosemary, thyme, garlic, lemon zest, dijon mustard, honey, 1 teaspoon salt, and ½ teaspoon pepper until well combined.

Pour the mixture over salmon (lift the fillets to help the marinade run under) then cover and let marinate in refrigerator 30 minutes, turning once halfway through.

Preheat the grill to medium-high heat during the last 10 minutes of marinating the salmon.

Brush the grill grates with oil, spoon some of the herbs onto salmon (or just use hands to spread them over), remove the salmon from marinade, and place on the grill.

Grill for about 3 to 5 minutes per side to cook through.

Serve warm, garnished with more parsley if desired.
