Ingredients
2lemons,zest only
1½tbspsalt
2tbspextra-virgin olive oil
black pepper,freshly ground
1½lbspork loin,trimmed of excess fat
honey roasted apples
Preparation
Preheat the oven to 375 degrees F.
Finely zest the lemons, then rub them with salt and pepper between fingers.
Add in 1 tablespoon of olive oil, then rub the lemon-salt mixture all over the pork loin.
Roast the pork loin for 20 to 25 minutes, until just cooked to 145 degrees F.
Remove the pork from the pan, then let rest on a cutting board for about 5 minutes.
Slice the pork.
Serve with honey roasted apples, if desired, and enjoy!
