Ingredients

8ozfresh cooked lobster,(from 2 to 1¼ lb lobsters), chopped

3½cupsasparagus,chopped

4tspextra-virgin olive oil

2tbspfresh lemon juice

¼tspkosher salt

black pepper,to taste

½cupcherry tomatoes,quartered

2tbspred onion,diced

1basil leaf,chopped

Preparation

Bring a medium pot of water to a boil, add the asparagus and cook for about 2 to 3 minutes, until tender yet firm

Drain and run under cold water to stop from cooking further. Set aside.

In a small bowl combine the oil, lemon juice, salt, and pepper.

In a large bowl combine the asparagus, lobster, tomatoes, red onion, basil, and dressing.

Divide equally in 2 bowls and eat right away.
