Ingredients

13.7ozfull fat coconut cream,or coconut milk

2tbspconfectioners sweetener,or confectioners/icing sugar

3tbspunsweetened cocoa powder

¼tsp salt ,optional

20g70% chocolate,shaved, optional

chocolate,extra shaved, to garnish

Preparation

Place the sealed cans of coconut cream in the refrigerator overnight.

Without shaking the cans, open carefully then scoop out the thick cream sitting at the top above the water.

Transfer the thick hard cream to a bowl, then discard all of the liquid left in the bottom of the cans.

Add the sweetener and beat on high using a hand mixer for 1 to 2 minutes until thick and creamy.

Reserve about 4 tablespoons of the plain ‘whipped cream’ and set aside.

Fold the cocoa powder and salt through the cream, then beat again until smooth, well combined and thick.

Fold through the shaved chocolate.

Dollop the ‘plain whipped cream’ over the mousse and sprinkle with shaved chocolate.
