Ingredients
1½cupsgrape tomatoes,chopped
1cupcarrots,diced
1cupyellow bell pepper,chopped
1½cupscucumber,chopped
1cupgreen cabbage,or red cabbage, chopped
1cupcauliflower,pieces
1cupzucchini
1½tbspfresh dill,chopped
2tbspfresh parsley
½cupvegetable oil
3tbspred wine vinegar
1tspdijon mustard
½tspItalian seasoning
1tspsugar
salt and pepper
Preparation
Combine the vegetable oil, red wine vinegar, dijon mustard, Italian seasoning, sugar, salt, and pepper in small bowl or jar.
Whisk or shake to combine.
Chop the grape tomatoes, carrots, yellow bell pepper, cucumber, cabbage, cauliflower, zucchini, dill, parsley, then place them in a large bowl.
Toss the vegetables with the dressing.
Refrigerate for at least 2 hours, stirring occasionally.
