Ingredients
5 lb potatoes
1 medium onion, diced
12 eggs, hard boiled
1 jar pimento, medium jar, diced
mayonnaise
salt and pepper
Preparation
Boil potatoes until fork tender, set aside to cool. When cool, dice into 1-inch cubes. If too small a cube, they turn into mashed potatoes, you don’t want that.
Dice the hard-boiled eggs, add to potatoes, season with salt and pepper to your taste. Add the jar of pimientos and juice too. Add the diced onions, stir gently.
Spoon in the mayonnaise. Add the mayonnaise to the consistency you like. Set in the refrigerator until cold.
