Ingredients
1 tbsp. butter
8 oz beef-flavored rice and vermicelli mix
2 ⅓ cups water
8 oz frozen meatballs, cooked
2 cups frozen broccoli, thawed, chopped
½ cup red bell pepper strips
Preparation
Prepare rice mix according to package directions, but add meatballs right after adding seasoning packet and water.
Heat to boiling.
Stir; reduce heat; cover and cook for 15 minutes.
Add broccoli and bell pepper.
Cover; cook over medium heat for 7 to 8 minutes until broccoli is just tender and rice is cooked.
