Ingredients
¾cupcouscous
1tbspbutter
¾cupwater
1cuptomatoes
1cupcucumber ,sliced
1bell pepper ,chopped
¼cupred onion,thinly sliced
⅓cupfeta cheese,crumbled
⅓cupflat leaf parsley,chopped
3tbspolive oil
2tbspred wine vinegar
1tbspFresh Lemon Juice
1½tsphoney
1clovegarlic,minced
salt & pepper ,to taste
Preparation
Bring water, butter, and a pinch of salt to a boil. Add couscous, stir and cover. Remove from heat and let it sit for 5 minutes.
Meanwhile, place all dressing ingredients in a jar and shake well to combine.
Place couscous in a large bowl and fluff with a fork. Allow to cool completely.
Add remaining salad ingredients and dressing. Toss to combine and serve.
