Ingredients
¼cupolive oil
¼cupred wine vinegar
1tbspdried oregano
1tbspgarlic,chopped
15ozchickpeas,(1 can), drained
6ozsmall black olives,(1 can), drained
6ozmarinated artichoke hearts,(1 jar), drained
6ozroasted red peppers,(1 jar), drained, chopped
3ozfeta cheese,crumbled
1½oznon pareil capers,rinsed, drained
10ozdolmas grape leaves,(1 jar), drained, rinsed
Preparation
Whisk together the oil, vinegar, oregano, and garlic for the dressing in a small bowl until blended.
Mix together the chickpeas, olives, artichoke hearts, roasted red peppers, feta cheese, and capers in a large bowl. Add the dressing and toss to coat.
Serve with dolmas, if desired. Enjoy!
