Ingredients

6ozfeta cheese

2ozcream cheesesoftened

¼cupolive oil

salt and pepperto taste

½cupartichoke heartsmarinated, drained, and coarsely chopped

½cupkalamata olivescoarsely chopped

⅓cupsun dried tomatoesthinly sliced, packed in oil, drained

¼cuppine nutstoasted

¼cupparsleyfinely chopped

Preparation

Place the feta cheese and cream cheese in the food processor. Pulse until the feta is finely chopped.

Pour in the olive oil and process until smooth for about 2 to 3 minutes. Taste and season with salt and pepper if desired.

Spoon the whipped feta into your serving container.

Top with artichokes, kalamata olives, sun-dried tomatoes, pine nuts, and parsley. Serve with vegetables and crackers.
