Ingredients

2cupssugar

1¾cupsflour

1cupunsweetened cocoa powder

1½tspbaking powder

1½tspbaking soda

1tspsalt

2eggs,large

1cupwhole milk

½cupVegetable Oil

1tbspvanilla extract

1cuphot coffee,or boiling water

*mint frosting,(see Recipe Notes for recipe)

Preparation

Preheat the oven to 350 degrees F and butter and dust with cocoa powder 2 9-inch cake pans.

In a stand mixer on low speed mix together the sugar, flour, cocoa powder, baking powder, baking soda and salt,

In a small bowl whisk together the eggs, milk, oil, and vanilla then add it to the stand mixer on low then medium speed until just combined and finally, without turning on the mixer, add in the coffee carefully and stir it in by hand until just combined.

Pour half of the batter into each of the pans and bake for 30 to 35 minutes then remove, let cool completely and frost with the mint frosting.
