Ingredients
1cupmayonnaise
3green onions,white parts, plus 2 inches of the green
1cupfresh mint,chopped
½cupfresh flat-leaf parsley,chopped
2tbspfresh chives,chopped
3anchovy fillets in oil
1tbspred wine vinegar
freshly ground black pepper
Preparation
In a blender or food processor, combine the mayonnaise, green onions, mint, parsley, chives, anchovy, and red wine vinegar until well mixed.
Scoop into a bowl and season to taste with pepper.
Cover and refrigerate before using.
Serve over salads, and enjoy!
