Ingredients

24ozsemi-sweet chocolate chips,(1 bag)

8ozcream cheese,softened

3tbspinstant coffee granules

2tspwater

6ozsemi-sweet chocolate chips

1tbspshortening

Preparation

Line a baking sheet with waxed paper.

Melt the chocolate chips in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting for 1 to 3 minutes. Mix in the cream cheese, coffee granules, and water into melted chocolate until smooth.

Chill the chocolate mixture for about 30 minutes until firm enough to shape.

Shape the chocolate mixture into 1-inch balls and place on the prepared baking sheet.

Chill the truffles for at least 1 to 2 hours until firm.

Melt the chocolate chips and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting for 1 to 3 minutes.

Dip the truffles in the melted chocolate mixture and return to the waxed paper. Set aside for at least 30 minutes until firm.

Serve and enjoy.
